Soley Kouche Restaurant, a fine dining restaurant located in Delcer, Choiseul is seeking to recruit an Executive Chef to join our team.

Executive Chef

QUALIFICATIONS

Essential:

  1. A Culinary college degree.
  2. Certification of Culinary training or apprenticeship.
  3. 4 years experience in a similar position at a luxury (4/5 Star) style Hotel.
  4. Work all stations in Kitchen.
  5. Food handling certificate.
  6. Fluency in English both verbal and non-verbal.
  7. Compute basic arithmetic.
  8. Provide legible communication.
  9. Knowledge of food cost controls.
  10. Previously worked with all products and food ingredients.
  11. Operate, clean and maintain all equipment required in job functions.
  12. Plan and develop menus and recipes.
  13. Expand and condense recipes.
  14. Ability to:
  • perform job functions with attention to detail, speed and accuracy.
  • Prioritize, organize and delegate work assignments.
  • be a clear thinker, remaining calm and resolving problems using good judgment.
  • follow directions thoroughly.
  • understand guest’s service needs.
  • ability to motivate kitchen staff and maintain a cohesive team.
  • maintain confidentiality of guest information and pertinent hotel data.
  • ascertain departmental training needs and provide such training.
  • direct performance of staff and follow up with corrections when needed.
  • Ability to maintain good coordination.
  • Ability to transport cases of received goods to the workstation stations; pots and pans of food from storage/prep areas to the serving line.
  • work an 8-12  hour shift, 5-7   days per week.
  • work with all products and food ingredients involved.
  • use all senses to ensure quality standards is met.
  • differentiate dates.
  • operate, clean and maintain all equipment required in job functions.
  • plan and develop menus and recipes.
  • expand and condense recipes.
  • perform job functions without direct supervision.
  • Ability to ensure security of kitchen access, products and hotel.
  • enforce hotel’s standards, policies and procedures with all kitchen personnel.
  • Ability to promote positive work relationships with service personnel and other departments.
  • Ability to work well under pressure of organizing and attaining production schedules and timelines.

Desirable:

  1. Culinary college degree.
  2. Driver’s license.
  3. Fluency in a second language, preferably Spanish.
  4. Sanitation certificate.
  5. Maintain good coordination.
  6. Certification in CPR.
  7. Ability to input and access information in the property management system/computers/point of sales system.
  8. Previous guest relations training.
  9. Creative talent.

Sous Chef

QUALIFICATIONS

  3. Ability to work all stations on the line.
  4. Food handling certificate.
  5. Fluency in English both verbal and non-verbal.
  6. Compute basic arithmetic.
  7. Provide legible communication.
  8. Comprehend and follow recipes.
  9. Expand/condense recipes.
  10. Ability to:
  • perform job functions with attention to detail, speed and accuracy.
  • prioritize and organize.
  • be a clear thinker, remaining calm and resolving problems using good judgment.
  • follow directions thoroughly.
  • understand guest’s service needs.
  • work cohesively with co-workers as part of a team.
  • work with minimal supervision.
  • maintain confidentiality of guest information and pertinent Hotel data.
  • direct performance of staff and follow up with corrections when needed.

Desirable:

  1. Some college Degree.
  2. Certification of Culinary training or apprenticeship.
  3. Previous supervisory experience.
  4. Fluency in a second language, preferably Spanish.
  5. Sanitation certificate.
  6. Previously worked with all products and food ingredients involved.
  7. Artistic talent.
  8. Ability to input and access information in the property management system/computers/point of sales system.
  9. Previous guest relations training.
