Saint Lucia National Trust (the Trust) was created by the Saint Lucia National Trust Act. (Cap. 6.02 of the Revised laws of Saint Lucia) as a Not-for-Profit Organization with responsibility to conserve, protect and preserve, as the case may be, the natural and cultural patrimony of Saint Lucia for the enjoyment of present and future generations.

The Trust is seeking proposals from experienced restaurant/bar operators to operate the Jambe de Bois restaurant at the Pigeon Island National Landmark.

Background

The Pigeon Island National Landmark (PINL) is one of Saint Lucia’s premiere attractions for residents, nationals and international and regional visitors, attracting on average, 100,000 visitors per annum.

To properly serve the needs of the growing number of visitors, the Saint Lucia National Trust is seeking an operator of outstanding quality who can provide excellent restaurant services to visitors to the PINL.

The Trust is soliciting proposals from qualified restaurateurs with proven backgrounds in the restaurant or food service industry, to enter into a lease to occupy and operate a quality restaurant experience under the name “Jambe de Bois”, in the designated interior and exterior restaurant space located on the southern waterfront of the PINL.
