Chefs Administrative Training
Monroe College’s School of Hospitality Management and the Culinary Arts through the Saint Lucia Hotel and Tourism Association (SLHTA) reached out to Chefs in the Hospitality Industry by offering Chef’s Administrative Training to boost the competences of Chefs at all levels.
The Chefs substituted being in their kitchens during this six week period with sitting in classrooms at Monroe College to enhance their supervisory skills. This training is geared at helping chefs understand the importance of proper Sanitation, safety and hygiene standards, monitoring goods in order to maintain cost control. Chefs will also learn how to organize his/her kitchen, managing kitchen waste, preparing work schedules, handling and managing stress and how to communicate properly with kitchen staff.
The SLHTA celebrates another proud achievement, as thirteen (13) additional Chefs recently graduated from the Chefs Administrative Training, bringing the amount to a total 40 chefs since the commencement of the programme in 2012. The properties who have taken advantage of this opportunity include The Body Holiday Le Sport, Anse Chastanet and Jade Mountain Hotel, Orlando’s Restaurant & Bar, Sandals Halcyon & Sandals Grande, Bay Gardens Resorts, Fire Grill Restaurant & Bar, Ti Kaye Resort & Spa, La Haut, The Romantic Holiday Rendezvous, Auberge Seraphine, Smuggler’s Cove Beach Resort, Bel Jou Hotel, Stonefield Estate Resort and St James Club Morgan Bay St Lucia. Upon completion of the course, the Chefs graduated with a Management Level Certification.
